Bacon Jam Cinnamon Rolls

Dough recipe:
3/4 c. whole milk 3 1/4 - 31/2 c. flour
1/4c. butter 1/4 c sugar
1 tbsp. sugar 1/2 tsp salt
2 1/4 tsp yeast 1/4 c water
1 egg
Heat milk, butter and sugar on stove top till 110F. is reached. Butter does not have to melt. Remove from heat and sprinkle with yeast.
Meanwhile in stand mixer combine 2 1/4 cups flour, sugar and salt - mix well. Slowly add water mixed with egg and milk mixture - beat well.
Add remaining flour a bit at a time, mixing well after each addition. When dough has formed a ball turn it onto a lightly floured surface and knead until smooth and squeaky - about 5 minutes.
Cover and let rest while you prepare the filling.
Filling:
1/2 c bacon jam
1/2 c brown sugar
1 tbsp cinnamon
1/3 c butter
raisins (optional)
In a sauce pan heat all ingredients except raisins till warmed through and able to spread nicely. Not too hot!
Set aside.
On floured work surface roll your dough out to a 12 x 9 inch rectangle. Spread dough with bacon jam mixture.
Sprinkle with raisins as desired. Roll up on the long edge and cut into 12 equal sized pieces. Place into greased muffin tins or pan. Cover and let rise till doubled in size. If your kitchen is colder this may take a few hours - if it is warmer maybe about 2 hours. Don't be in a hurry - let the yeast do it's job.
Preheat your oven to 375 F - then bake for 20 minutes or until nicely browned.
Remove from muffin tins to cool a bit - then serve warm.
