Pan Fried Ahi Tuna

Ingredients
Ahi tuna cut 1 1/2 inch thick
Vegetable oil
Seasoning Mix
Coarse ground black Pepper
Lemon Wedges
Seasoning Mix :
1 1/2 tsp salt
2 tsp Dragon Spice - Substitute 1 tsp cyane pepper and 1 tsp paprika if you do not have dragon spice.
1 1/2 tsp coriander
2 tsp granulated Garlic
Mix together in small shaker.
Preparation
One hour prior to cooking, lay tuna steaks out on plate. Sprinkle with seasoning mix. As much as you like. Sprinkle with coarse ground pepper. If you like it hot then use more rather than less of the seasoning and pepper!
Place thick bottomed frying pan or cast iron pan on high heat, add oil and heat till almost smoking. Sear tuna 30 - 40 seconds only on each side. Tuna will be very rare. If you want a more med-rare tuna place tuna on oven proof dish and set in preheated oven, 350 deg. F. , for about 5 minutes.
Remember if your steaks are any thinner than 1 1/2 inches, then you will want to decrease your cooking time by 1/2.
Serve with fresh lemon wedges.
